Stuffed Green Peppers

Hi everyone- here is my recipe for stuffed green peppers, I hope you enjoy
them- Keri (sunnyvale, California)

Stuffed Green Peppers

4 large green peppers
3/4 lb ground beef (ground chicken or turkey can be subst.)
1 medium onion, chopped
14 1/2 oz can of diced tomatoes with juice
8 oz can tomato sauce
1/2 cup white rice
1/2 cup water
2 Tbsp Worcestershire sauce
1 1/2 cups grated cheddar cheese
8 slices American cheese (Kraft singles) for topping *(if you want to cut
down on the cheese, you can use half the cheddar cheese in the stuffing
and
reserve half for sprinkling on top instead of the singles)
salt, pepper to taste

Preheat oven to 375 F Slice peppers in half lengthwise, remove stems
carefully and inner membrane and seeds. Blanch peppers for 3 minutes in
boiling water, immediately immerse in cold water when done (to stop
cooking) then salt the inside of the peppers and drain on paper towels.
Then saute ground beef and onion in a large frying pan until beef is
browned and onion is soft. add tomatoes and tomato sauce, water,
Worcestershire sauce, rice, and salt and pepper (to taste). cover and
cook for 15 minutes (until rice is tender and most of the moisture is
absorbed). after cooking, add cheddar cheese and stir till melted
through. fill each pepper half with the mixture and place in a baking
dish. top each half with cheese slice (or reserved grated cheese) and
bake for 15 minutes. enjoy!
