Default Danish Aebleskiver

For Charmaine Jensen

Aebleskiver (Danish Pancakes)

2 cup milk
3 eggs, separated
2 cup flour
1 tsp. salt
4 tsp. baking powder
1 Tbsp. sugar
vegetable oil

Combine milk and egg yolks. Sift together dry ingredients and add to
milk and egg mixture. Beat egg whites until stiff. Fold in.
Heat aebleskiver pan. Put about 1
teaspoon of vegetable oil in each cup of the pan. Put enough batter in
each cup to almost fill it. Use metal knitting needle to turn
aebleskivers. Keep turning them until golden brown. Add additional
shortening for each frying.

Serve with syrup, jams or jellies. Makes about 3 dozen aebleskivers.
