Default Cream Cheese Muffins

Cream Cheese Muffins

8 ounces cream cheese
1/4 cup butter, softened
1 egg, beaten
1/2 cup milk
1/4 teaspoon vanilla extract (optional)
1/4 teaspoon lemon extract (optional)
1 1/2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt

Preheat oven to 400 degrees. Beat cream cheese and butter together;
add egg and milk and mix well. Mixture does not have to be smooth. If
you want a flavoring, add it with the milk and egg. Combine the dry
ingredients and fold in until just moistened. Batter will be stiff.
Fill greased or lined muffin tins about 3/4 full. Bake at 400 degrees
for 20 to 25 minutes, or until golden on top.
