Default Zuccarini

Zuccarini

http://www.digitalsquirrel.com/recipes

Makes 5 dozen or more

1/4 lb butter
1/3 cup oil
1 cup sugar
6 eggs, beaten
1 tsp lemon or anise extract
5 cups flour
4 Tbsp baking powder
1/4 tsp salt

Frosting:
1/4 cup water
1/2 lb confectioner's sugar
1/2 tsp extract of your choice
2-3 drops food coloring

Blend butter and oil together, add sugar and then cream well. Add
eggs and extract.
Sift together flour, baking powder and salt and then mix into batter.
Pinch off small pieces (about 1 Tbsp for each cookie). Roll on
floured board to the thickness of a pencil, then form into small knots.
Place on ungreased baking sheet. Bake at 350 for 15 minutes.
After cooling, I usually make a simple flavored frosting with
confectioner's sugar and some extract. (Usually you match a teaspoon of
extract to a box of confectioner's sugar). Just slowly add water to the
sugar until you get a good mixture and add a few drops of food coloring.
Just dip the cookies in and let sit on a cooling rack until they dry.
