Tomatoes Stuffed With Goat Cheese

Fresh From a Monastery Garden

Cost: $ Preparation Time: 20 Minutes
Difficulty Level: 2 Servings: 4

4 medium ripe tomatoes
10 ounces goat cheese
4 tablespoons olive oil
Pinch of thyme
Pinch of rosemary
Salt and pepper to taste

Preheat the oven to 300 degrees F. Slice off the tops of the
tomatoes and then with great care hollow out their insides. Place
them upside down over a paper towel to get rid of remaining water
(for at least 10-15 minutes).
In a deep bowl, mix the goat cheese, oil, thyme, rosemary, salt,
and pepper. Mix all the ingredients well with the help of a fork.
Divide this mixture into 4 equal portions, and place each portion
inside the tomatoes.
Place the stuffed tomatoes into a well-buttered flat baking dish.
Bake the tomatoes at 300 degrees F. For about 20 minutes.
