This makes a a lot, but it is soooo good! The secret is using lime
juice. I chop everything together by hand. I think it makes a better texture. Chimichurri 1 large bunch of cilantro, washed and brown leaves removed. Remove part of the stems if you want, but they improve the flavor. 8 cloves garlic, peeled 1/4 cup vinegar (Or as needed) Juice of one lime 2/3 cup extra virgin olive oil (be sure it is GOOD olive oil, not raw or linseedy tasting) 1/2 cup chopped sweet onion (less if the onion is strong) Dash or two of red pepper flakes or Tabasco (optional) Salt and Pepper to taste Put everything except the olive oil in a blender and using the "chop" setting, click on and off until you have a thick mixture. IMPORTANT: Do not over process!! This is the kind of dish you need to taste and adjust as you go along so that you get just the right flavor! So taste it! (The best way to taste it is with a piece of bread.) Whisk in the olive oil by hand. DO NOT use the blender for this step, as it will turn the chimichurri into paste. Add salt, pepper, more vinegar and lime juice as needed while whisking. The flavor should be very intense with garlic and cilantro. Don't be stingy with the salt either!
