Hi all,
Found this recipe a couple of weeks back for roasted tomatoes, and it's so easy to make, and tastes Great! Roasted Tomatoes The method below can be applied to 1 or 100 tomatoes. Doesn't matter. I cook around 8 at a time and keep them in the fridge, re-heat them as required. tomatoes olive oil into each pulp sack. balsamic vinegar. The method below can be applied to 1 or 100 tomatoes. Doesn't matter. I cook around 8 at a time and keep them in the fridge, re-heat them as required. Cut the top off of a tomatoes until the "pulp pouches" are revealed. Scrape out the pulp and seeds. (shaking upside down helps too) Place around 2 - 3 drops of olive oil into each pulp sack. Fill the rest of the space with Balsamic Vinegar. Place on a baking tray and into the oven at 120.C for 2 1/2 to 3 hours. I find them really good with Bacon and Eggs. Even the wife (who hated tomatoes in any form) loves them. Enjoy!
