Chicken With Broccoli Rabe And Bacon

This recipe serves 6 and goes good when served with boiled cubed potatoes
rough mashed to sop up the juices.

1 bunch broccoli rabe, cut in pieces
2 slices bacon
4 chicken breast halves
1/2 tsp. each salt and ground black pepper
2 Tbsp olive oil
1 each onion and clove garlic, sliced
1/2 tsp. crushed red pepper

Bring a pot of salted water to boil. Add broccoli cook until tender,
drain. Cook bacon in skillet until crisp, drain. Heat skillet, add 1 tsp.
bacon fat. Add chicken and cook until golden and cooked through. Sprinkle
with salt and pepper, remove to a plate. Add oil to skillet. Add onion and
cook until golden. Add garlic and red pepper and cook until golden. Add
broccoli to skillet. Top with chicken and juices. Cover and cook to heat
through. Cut bacon in pieces, sprinkle over chicken and broccoli rabe
before serving.
