These are some recipes that use watermelon in a drink and the watermelon
rind. They are the only recipes that I have for watermelon, as I like to
eat plain cold watermelon.

Watermelon Cooler

Note: This is a great drink to give the kids (and adults)
while cooking and playing outside.

1/2 medium watermelon

About 2 cups of ice

Fresh Mint Leaves

Juice the watermelon (use a bit of the rind for more nutrition) in a
professional juicer. Pour into a blender and add ice. Mix to make a
"slushy" type drink. Garnish with mint leaves. Serve immediately.

Yields: 2 to 3 servings.


Watermelon Lemonade

8 cups seeded watermelon cut into 1-inch chunks
1 cup hulled and quartered fresh strawberries
1 cup granulated sugar
1/2 cup freshly squeezed lemon juice (about 3 lemons)
2 cups water (approximately)
Thin watermelon wedges with the rind (optional)

In a food processor fitted with a steel blade pulse the watermelon,
strawberries, and sugar until blended and smooth. Strain through a
fine-mesh strainer into a 2-quart container, pushing down
on the solids to get all the juice. Add the lemon juice and enough of
the water to make 1 1/2 quarts. Chill until very cold. Serve over ice
with a wedge of watermelon, if desired. Yields: 1 1/2 quarts



Melonade

2 cups watermelon, cubed
1 pint fresh or 2 cups frozen whole strawberries
1/2 cup sugar
1/3 cup lemon juice
2 cups ice cubes
Mint leaves, melon, berries for a garnish (optional)

Place all ingredients in blender, and Blend until ice is crushed.
These require some work and time but I just love them.
