1/4 cup espresso or very strong coffee
3 tablespoons Kahlua
3 large eggs, room temperature -- separated
1 teaspoon vanilla
8 ounces mascarpone
1 17 oz. pkg. ladyfinger cookies

In a small bowl mix the coffee and Kahlua and set aside.
Beat the egg whites until stiff and set aside.
In another bowl beat the egg yolks and vanilla until pale and
lemon-colored. Add the mascarpone until smooth. Fold the egg whites into
the cheese mixture gently.
In 4 small glass dessert bowls, place 3 ladyfingers in bottom and
generously sprinkle the Kahlua coffee mixture. Drop 1/4-cup dollops of
cheese mixture on top of ladyfingers, repeat with the lady fingers again
followed with the Kahlua-coffee mixture. Top with cheese mixture.
Refrigerate for at least 3 hours or overnight. Before serving top with
fresh whipped cream and dust with cocoa, or sprinkle chocolate shavings on
top.

Notes : Raw Egg Warning The American Egg Board states: "There have been
warnings against consuming raw or lightly cooked eggs on the grounds that
the egg may be contaminated with Salmonella, a bacteria responsible for a
type of food poisoning -- Healthy people need to remember that there is a
very small risk and treat eggs and other raw animal foods accordingly. Use
only properly refrigerated, clean, sound-shelled, fresh, grade AA or A
eggs. Avoid mixing yolks and whites with the shell."

8 large egg yolks
1/2 cup , sugar
1 1/2 pounds mascarpone cheese
4 large egg whites -- beaten until stiff
peaks form
2 cups espresso coffee -- cold
1/4 cup brandy
42 ladyfingers
1/2 cup unsweetened cocoa powder
semisweet chocolate -- for garnish

In the bowl of an electric mixer, beat the egg yolks and the sugar
until thick and pale yellow. Fold the mascarpone into the eggs until
thoroughly incorporated and smooth. Fold the egg whites into the
mascarpone mixture thoroughly.
In a medium bowl combine the espresso and brandy. Dip the ladyfingers
quickly into this mixture, one at a time, and place a layer of them very
close together in a 14 x 10 dish. Spread half the mascarpone mixture
evenly over the ladyfingers. Sprinkle the cocoa powder evenly over the
mascarpone through a fine mesh strainer. Dip more ladyfingers into the
espresso mixture and place over the mascarpone, making another layer. Top
with the remaining mascarpone and sprinkle with the cocoa through a fine
mesh strainer. Cover the dish with plastic wrap and refrigerate several
hours.
Just before serving shave some semisweet chocolate over the cake.

3 tablespoons sugar
2 egg yolks
2 ounces cream cheese
5 3/8 ounces Mascarpone cheese
3 teaspoons Marsala wine
7 ounces heavy whipping cream -- whipped
2 cups espresso or strong coffee
1 ounce additional Marsala
2 tablespoons additional sugar
1/2 cup warm water
24 French-style ladyfinger cookies
3 tablespoons powdered sweetened cocoa mix

STEP ONE: Prepare Cream Mixture-- In an electric mixer, prepare cream
mixture by whipping sugar and egg yolks on high speed until pale yellow
and thick. With mixer on medium speed, add cream cheese and whip until
smooth. Add Mascarpone and Marsala. Mix until incorporated. Fold in
whipped cream. Refrigerate.

STEP TWO: Prepare Espresso Mixture-- To prepare espresso mixture, combine
espresso, additional Marsala, sugar, and warm water.

STEP THREE: To assemble, dip ladyfingers in espresso mixture. Place one
layer of dipped ladyfingers on bottom of serving platter. Top with one
layer of cream mixture. Add another layer of dipped ladyfingers, topped
with a second layer of cream mixture. Sift cocoa over top.
