Applebee's Barbecue Sauce

1/3 cup Bottled apple butter
1/3 cup Catalina dressing
1/3 cup Ketchup
2 tablespoons Worcestershire
TO MAKE 1 QUART
1 1/3 cups Bottled apple butter
1 1/3 cups Catalina dressing
1 1/3 cups Ketchup
1/2 cup Worcestershire

Combine all ingredients. Will keep in the refrigerator for a few weeks or
may be frozen.

Justin Wilson Barbecue Sauce (Original)

1/4 cup Honey
1 Tbsp Garlic, chopped
2 Tbsp Lemon juice
1 cup Sweet pepper, chopped
1 Tbsp Salt
1/2 cup Parsley, dried
3 Tbsp Lea & Perrins
1 cup Dry white wine
1/2 tsp Mint, dried
3 Tbsp Vinegar
1 Tbsp Liquid smoke
2 cup Ketchup
1/2 Tbsp Louisiana hot sauce

Place all ingredients in a pot that is big enough to hold them. Bring
to
a
boil. Cook, covered, on low heat for several hours. From

Basting Sauce for Barbecue

1/2 cup Margarine or Butter
1/2 cup Bacon drippings
3 Tbsp Lemon juice
1 Tbsp Worcestershire Sauce
1 tsp Garlic Powder
1 tsp Salt
1 tsp Pepper
2 tsp Chili Powder
2 cup Water

Butter is preferred in this dish for flavor, but you may prefer
margarine.

In a saucepan, combine margarine, bacon drippings, lemon juice and
Worcestershire Sauce. Cook over low heat until butter margarine melts.
Dissolve Chili Powder, Salt, Pepper and Garlic Powder in water and add
to
margarine mixture. Bring to a boil. Lower heat and simmer for 15
minutes.

Makes 3 1/2 cups. Will serve to baste 6 lbs. brisket.

1/4 cup Coleman's mustard

Half a cup of soy sauce, half a cup of maple syrup and about a quarter

Beer Barbecue Sauce

1 cup Prepared barbecue sauce
1 cup Ketchup
2/3 cup Beer
1/4 cup Honey or Molasses
2 tablespoons Lemon juice
2 tablespoons Red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon Hot pepper sauce
1/2 teaspoon Pepper
2 Garlic cloves -- minced
2 Onions -- finely chopped

In large bowl, combine barbecue sauce, ketchup, beer, honey, lemon juice,
vinegar, mustard, Worcestershire sauce, hot pepper sauce, pepper, garlic
and
onions.
Place food in marinade and let stand at room temperature for up to 2 hours
or in refrigerator overnight. When ready to cook, remove food and place
marinade in saucepan and cook for 10 minutes or until thickened.
Use as sauce for basting or serving with cooked food.

until well blended. Use as baste for charcoal-broiled chicken.

Citrus Barbecue Sauce

1 Onion -- Large, Finely

1 Tbsp Ground Red Chiles
1/4 tsp Ground Red Pepper
1 Ancho Chile -- *
1 Tbsp Vegetable Oil
1 cup Orange Juice
1/2 cup Lime Juice
2 Tbsp Sugar
2 Tbsp Lemon Juice
1 Tbsp Fresh Cilantro -- Snipped
1 tsp Salt

* Ancho chile should be seeded and finely chopped.
Cook onion, ground red chiles, red pepper and ancho chile in oil,
stirring
frequently, until onion is tender, about 5 minutes. Stir in remaining
ingredients. Heat to boiling, reduce heat to low. Simmer uncovered,
about
10 minutes, stirring occasionally. Makes about 2 1/3 cups of sauce.

Watermelon Barbecue Sauce

1 ea 6 lb Seedless Watermelon
8 oz Tomato Paste
1 Tbsp Onion Powder
1 Tbsp Garlic Powder
2 cup Firmly packed brown sugar
1/2 cup Sherry
2 tsp Lemon juice
1 tsp Liquid smoke

Cut the melon into chunks and place in a saucepan. Cook it uncovered
over
medium heat until the melon is the consistency of applesauce
(approximately
2-3 hours). Stir it occasionally. Add remaining ingredients. Simmer
uncovered over low heat for 2 hours. Allow to cool to room temperature
before using.

Options: White vinegar may be substituted for the lemon juice. Try
mixing
yellow tomatoes and watermelon for color variation

Honey Spiced Barbecue Sauce

Combine all ingredients in a saucepan and heat to blend together.

Jack Daniels Barbecue Sauce

1/2 lg Onion -- chopped
4 Cloves garlic -- chopped
2 cup Ketchup
1/3 cup Vinegar
1/4 cup Worcestershire sauce
1/2 cup Brown sugar -- packed
3/4 cup Molasses
1/2 tsp Pepper
1/2 Tbsp Salt
1/4 cup Tomato paste
2 tsp Liquid Barbecue Smoke
1/2 tsp Tabasco sauce -- to taste
Bourbon or whisky -- to
Taste

Combine onion, garlic and bourbon in a 3 qt saucepan. Saute until onion
and
garlic are translucent, about 10 min. Flame if possible. Add all remaining
ingredients, bring to boil, then turn down mixture to a medium simmer.
Simmer for 20 min. stirring constantly. Run through strainer if you want a
smooth sauce. Makes 4 cups.
