Tuna And Rice Salad With Sweet Curry Dressing

2 cans tuna, drained
1 cup brown rice
3 green shallots, chopped
1 apple, chopped
1/3 cup raisins
1 stalk celery, chopped
1 red bell pepper, chopped

Sweet Curry Dressing
1 cup fat free plain yogurt
1 Tbsp curry powder
1/2 cup sugar
1 Tbsp mustard

Add rice to large pan of boiling water and cook for about 30 min, or until
tender. Drain rice, rinse under cold water and drain well. Combine rice,
tuna, apple, raisins, shallots, celery and pepper with dressing in bowl
and
mix well.

Dressing
Place all ingredients in a jar and blend well.




Home On The Range Tuna Salad

1/4 cup water packed tuna, drained and flaked
1 cup low fat cottage cheese
2 hard boiled eggs, peeled and chopped
1/2 cup chopped celery
1/2 cup chopped green onion
2 Tbsp chopped parsley
1 tsp lemon pepper seasoning
1/2 tsp salt
1/2 cup diet mayonnaise (4 Tbsp)

In mixing bowl, combine all ingredients. Chill.
Use as salad or sandwich filling.
May be stored in refrigerator up to one week.




Broccoli Tuna Bake

500 ml broccoli florets, cooked tender crisp (2 cups)
2 slices bread, cubed
1 can tuna, drained
3 eggs
500 ml cottage cheese (2 cups)
250 ml cheddar cheese, shredded (1 cup)
1 ml black pepper (1/4 tsp)

Add broccoli to baking dish. Top with bread cubes and tuna.
In a medium bowl; combine eggs, cottage cheese, cheddar cheese and pepper
Spread evenly over tuna mixture.
Bake in preheated 400 F (200 C) oven for 30 minutes or until golden brown

Serves 4

Variations:
- substitute some grated carrots for part of the broccoli




Tuna And Apple Bake

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup Onions -- chopped
1 cup Celery -- chopped
2 cups Apples,diced -- unpeeled
2 tablespoons Butter or margarine
11 ounces Can of Cheese soup -- condensed
1/2 cup Milk
2 cups Rice -- cooked
14 ounces Tuna -- drained
1 teaspoon Salt
1/4 teaspoon Pepper
3/4 cup Bread crumbs,butterd -- seasond

Saute onions, celery and apples in butter until tender but not brown.
Stir in soup, milk, rice, tuna, salt and pepper; mix thoroughly. Turn
into a buttered, shallow 2 1/2-quart casserole; sprinkle with bread
crumbs.
Bake in preheated 400'F. oven 20 minutes, or until thoroughly heated.
