Default Slow Cook Barbecue Pork

Slow Cook Barbecue Pork

Total cooking time is 14-16 hours (plus any time on smoker) so you may
want to start it in the evening and let it cook all night. Do the second
phase next morning, if you like. Can be frozen in smaller quantities and
reheated in microwave when needed. Can be made without smoking but
smoke adds that extra special flavour.

4 to 5 lb lean boneless pork butt or pork shoulder roast
garlic salt
black pepper
2 large sweet onions (optional)
1 can cola (or ginger ale)
bottled barbecue sauce

Optional first step: Bring roast to room temperature; rub all over with
your favourite spice rub. Water smoke at 200-225F for 2 hours or so,
using maple and/or hickory. Proceed with next step as soon as finished
smoking. If using onions, cut in half lengthwise; slice in 1/4 inch slices.
Separate rings. Place half in crock pot.

Sprinkle roast with garlic salt and pepper. (You may want to skip this
if you rubbed the meat before smoking). Place meat in crock pot on top
of onions, place remaining onions on top of roast; pour cola or ginger
ale over all. Cook on low for 10 -12 hours or until pork is very tender
and can be easily shredded.
Remove from slow cooker; place in a large bowl, let it cool slightly
then remove all possible fat and shred meat using two forks or your
fingers. Remove onions from pot with slotted spoon; add to bowl. Discard
cooking juice in pot.
Return meat and onions to crock pot; add barbecue sauce to taste. Cook
on low for 4-5 hours, adding more sauce - if needed. Should be nice and
moist but not wet! Don't kill it with barbecue sauce!

Serve on bun as a sandwich. Highly recommended that you serve topped
with cole slaw. (RWF)
