![]() Caramel-Pecan Turtle Pie Awesome Turtle Brownies Caramel-Pecan Turtle Pie * Exported from MasterCook * Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Pies and Pastries Amount Measure Ingredient -- Preparation Method -------- ------------ ------------ FILLING: 1 14 ounce bag caramel candy 1/2 cup unsalted butter 1/2 cup heavy whipping cream 2 cups pecan halves -- toasted 1 chocolate wafer pie crust TOPPING: 1/2 cup semisweet chocolate chips 2 tablespoons unsalted butter 2 tablespoons heavy whipping cream 2 tablespoons light corn syrup 1/2 teaspoon vanilla extract GARNISH: 1 cup heavy whipping cream -- whipped to soft peaks Put caramels, butter, and cream in a medium-size heavy saucepan. Cook over low heat, stirring often with a whisk or wooden spoon until caramels and butter melt. Remove from heat and whisk until completely smooth. Stir in pecans. Pour into pie crust. Cover with plastic lid and refrigerate 3-4 hours until cooled and firm. Once the filling layer has chilled, prepare topping by stirring chocolate chips and butter into a small heavy saucepan over low heat until melted and smooth. Remove from heat and stir in cream, corn syrup, and vanilla until blended; pour over pie. Chill at least 1 hour. Grease a foil lined 13 x 9 inch baking dish. Microwave chocolate squares and butter on high for 2 minutes or until the butter is melted. Stir until the chocolate is completely melted. Stir the sugar into the chocolate until well blended. Mix in the eggs. Stir in the flour. Spread one-half of the batter into the prepared baking dish. Bake for 25 minutes or until the batter is firm to the touch. Meanwhile, microwave the caramels and the cream on high for 3 minutes or until caramels begin to melt. Whisk until smooth. Stir in one cup of the nuts. Gently spread the caramel mixture over the brownie batter. Sprinkle with chocolate chips, if desired. Pour remaining unbaked brownie batter evenly over the caramel mixture. Sprinkle with the remaining nuts. Some of the caramel mixture may peak through. Bake an additional 30 minutes. Cool in pan on wire rack. Run a knife around the edge of the pan to loosen brownies from the sides. Lift from baking dish using the foil as handles. Cut into squares.
