Alton Brown's 1000 Island Dressing
Cashew Lime Dressing(no oil)
Creamy Ranch Dressing (fat-free)
Poppy Seed Dressing (oil-free, sugar-free)
Creamy Chipotle Lime dressing



CALORIE CAVEAT: The calorie information results from inputting these
recipes into the recipe program that I use (recipecalc). The caloric
information for all the ingredients is based on the individual nutrition
labels on each ingredient. The portion size is 2 tablespoons. Some
people may use more, others may use less...




Alton Brown's 1000 Island Dressing

1 cup Yogurt, plain
2 Tbsp Vegetable oil
2 Tbsp Tomato sauce
2 tsp Lemon juice
2 tsp dry Mustard
2 tsp sugar
1 tsp salt
1/2 tsp pepper, black
1/2 cup Onions, finely chopped
1 Tbsp Pickle relish, sweet
1 Tbsp green olives, finely chopped
3/4 tsp Peppers, jalapeno, finely chopped

In a bowl combine yogurt, vegetable oil, tomato sauce, lemon juice,
mustard powder, sugar, salt, and pepper. Whisk together until blended. Add
onion, sweet relish, olives, and jalapeno and whisk to combine evenly.
Chill 1 hour.
(approx serving size is 2 tablespoons -- 71 calories 4.6g fat. You can
lower this by using fat-free yogurt and only 1 tablespoon of oil)





Cashew Lime Dressing(no oil)

1/2 cup cashew nuts, dry roasted, without salt added
1/4 tsp pepper, black
1/2 cup Lime juice, fresh if possible
1 1/2 tsp Sea Salt
2 clove Garlic, avg size
1 cup Water,
1/4 tsp Guar gum

Combine cashews, salt, pepper, whole, peeled garlic, and fresh lime juice
in a blender. Blend on low speed for a few seconds, then switch to high
speed until cashews are thoroughly ground. Add water and guar gum and
blend on high speed until mixture is smooth and creamy. It's best if the
dressing is made a day ahead to allow the guar gum to thicken it slightly.
Refrigerate leftovers. Keeps well for one week. Makes 2 cups.

per 2 tablespoon serving: 30 calories 2g fat (from cashews)





Creamy Ranch Dressing (fat-free)

3/4 cup Yogurt, plain, fat-free
1/4 cup Mayo, Fat-free
1 Tbsp Vinegar, cider
2 tsp Dijon mustard
1/4 tsp pepper, black
1/4 tsp Onion flakes
2 Tbsp Parsley, raw
2 tsp dill weed, dried
1 tsp garlic powder
3 tsp Buttermilk Powder, cultured blend
1/4 tsp Sea Salt

Combine all ingredients. Whisk well and let rest. Refrigerate before
serving. If too thick, thin with water (by the teaspoon) until you reach
desired thickness. Makes about 4 servings. 41 calories 0g fat per serving




Poppy Seed Dressing (oil-free, sugar-free)

1/3 cup Vinegar, cider
1 cup Water
1/2 tsp Onions, dehydrated flakes
1/2 cup Splenda or equivalent
1 tsp dry Mustard
1 tsp Sea Salt
1 Tbsp poppy seed
1/2 tsp Guar gum

Pulverize the onion flakes with the salt. Blend all ingredients in blender
or mix by hand; will keep in fridge for a week. Makes 8 generous servings.
15 calories per serving






Creamy Chipotle Lime dressing

1/4 cup Yogurt, plain, fat-free
2 tsp Lime juice
1 tsp Oil, olive
1 1/2 tsp Honey
1/2 tsp powdered chipotle
1 tsp flat leaf Parsley, finely chopped


Mix all ingredients well. Add a dash of salt and pepper to taste.
3 servings -- 35 calories 1.5g fat
