I would love a "tomato pie" recipe!* * Exported from MasterCook * Tomato Pie Recipe By :Rick&Cyndi Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cornmeal Pie Shell -- recipe below 6 med. tomatoes -- (6 to 8) 1/4 cup mayonnaise 1/4 cup sour cream -- *see Note 1 clove garlic -- minced salt and pepper -- to taste 2 tablespoons butter 1/2 cup green onions -- chopped 1/2 cup soft bread crumbs 1/4 cup parsley -- chopped 1/4 cup Parmesan Cheese Cornmeal Pie Shell 3/4 cup all-purpose flour -- plus 2 tablespoons 2 tablespoons yellow cornmeal 2 tablespoons cold water 6 tablespoons butter -- chilled Prepare and partially bake pie shell. Slice tomatoes 1/2" thick and layer in pie shell. Combine mayo, sour cream & garlic. Spread over tomatoes. Sprinkle with salt & pepper. Melt butter and sauté green onions for a few minutes. Stir in bread crumbs, parsley, & cheese. Sprinkle over tomatoes. Bake at 350 F. for 30 minutes. Let rest at least 10 minutes before cutting and serving. Pie Shell: Combine flour and yellow cornmeal. Remove and discard 2 heaping tablespoons of the flour/cornmeal mix. Add water to mix (more if necessary) and cut-in butter. Mix all together and roll into a 10" circle. Fit into 9" pie pan. Trim/shape pie shell edges. Bake at 450 F. for 5 minutes. Source: "rec.food.recipes" NOTES : Plain yogurt may be substituted for sour cream. * Exported from MasterCook * Tomato Pie Recipe By :Paula Deen Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tomatoes -- peeled and sliced 10 fresh basil leaves -- chopped 1/2 cup green onion -- chopped 1 9 inch prebaked deep dish pie shell 1 cup mozzarella cheese -- grated 1 cup cheddar cheese -- grated 1 cup mayonnaise salt and pepper -- to taste Preheat oven to 350 degrees F. Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes. Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
