Chicken Saute With Peanut Sauce

1 pound boneless chicken breasts - (to 2) ; pounded 3/4" thick
~~ === MARINADE === ~~
1/2 cup soy sauce
2 tablespoon peanut oil
1 tablespoon chopped fresh ginger
1 tablespoon chopped fresh garlic
2 tablespoon rice vinegar
3 tablespoon honey
1 tablespoon cumin
1 tablespoon lime juice
1 teaspoon ground coriander
1 teaspoon freshly-ground black pepper
Salt ; to taste
~~ === PEANUT SAUCE === ~~
1/2 cup soy sauce
3 tablespoon rice vinegar
1/2 teaspoon hot chili paste
= (from Asian section in grocery stores)
3 tablespoon sugar
2 tablespoon lime juice
2 garlic cloves
1/2 cup fresh cilantro leaves ; (optional)
3/4 cup roasted peanuts
Salt ; to taste

Throw all marinade ingredients into a food processor and make a paste.
Take pounded chicken breasts and cut them lengthwise into strips about
1-inch wide. Marinate for 1 to 4 hours.
When you are ready to cook, thread the chicken on pre-moistened
skewers. Be sure to oil the grate on your grill before preheating on
high heat. Grill the chicken for approximately 5 to 6 minutes,
turning when necessary. Serve on the skewers or wrapped in lettuce
leaves.

For the Peanut Sauce: Blend everything together in a food processor.
Use water if needed to thin the sauce.

Comments: This recipe works just as well for beef, pork, or just
about any meat, even fish. Just keep whatever it is you are cooking
to a maximum of 3/4" in thickness, so it will cook thoroughly on the
inside. Be sure to soak the bamboo skewers (available in most grocery
stores) for at least 30 minutes before use.
