Steve's Quiche
 
Steve's Quiche

Makes 4 quiche. One of these will do for 4 dinner portions or 8
appetizers.

Freezes well. Great item to have in the freezer for emergencies.

4 pie shell, deep
8-12 cloves garlic
1 Tolive oil
2 Onions, chopped
2 lbsSpinach, frozen, chopped
2 lbcheddar cheese or 1 lb cheddar and 1 lb other (Jack, swiss,
almost any hard cheese)
12Eggs (sometimes I use a few more)
1 tdry mustard
1 T fine herbs or any french herb mix
2 t salt,
1 t white or black pepper
option: chilis, different herb mixes,

Paint the pie shells with some egg yolk. Then bake for 10 minutes at
375 degrees.
Fry in the oil: chopped garlic, diced onions, and chilis if they
appeal to you. Let this cool before adding to mix.
In a large bowl, mix: spinach (chopped), shredded cheese, eggs
(without the shells!), and the rest of the ingredients. Amounts of
these ingredients is fairly uncritical. Adjust to your taste. Place
into pie shells. You can bake for 20 minutes and then freeze or bake
for 45 minutes or until done and serve.
