In the 50's the Nankin (Minneapolis) topped their chow mein with what
appeared to be an egg rich garnish noodle ...dark yellow, flat but
very thin and very narrow. The taste accent was outstanding but
difficult to describe... and of course texture was unique as well.
I wonder if it was a dyed starch noodle....because eggs and flour
inevitably give you a noodle impossible to make that small. Was it
eggs and starch? One egg with a Tbsp of flour gives you
....nope.....ahhh...maybe it was egg yolk only!! I'll try that.
In the meantime can anybody come up with the real mccoy for this great
but elusive noodle?
