Default Beneductine Sandwich Spread

2-8oz. pkg. cream cheese
1 medium cucumber, seeded, grated
1 samll sweet onion, graded
dash of your favorite hot sauce
salt to taste
mayonnaise
green food coloring

The directions say to use fork which was what Miss Jennie Benedict had,
but I perfer a processor or hand mixer. Use paper towels to remove
moisture from the cucumber and the onion, geting them as dry as possible.
Mix both with the cream cheese. Add the hot sauce and the salt. Add enough
good mayonaise to make a smooth filling, easy to spread. Last of all add
just enough green food coloring to give a faint green tinge, not too
much!!

Other recipes call for a dash of red peppper, 1/2 t. Worcestershire sauce,
white pepper.

I like it on light rye bread, but one of the best ways to serve it is on a
croissant, split in half with bacon strips and alfalfa or spicy sprouts.
