Sweet Potatoes with Marshmallows
2 1/2 lbs. of sweet potatoes 1 Tbsp. butter 1/3 evaporated milk 1/4 cup of brown sugar 1 tsp. vanilla extract 1 Tbsp. cinnamon 1 bag of miniature marshmallows Preheat oven to 350 degrees. Peel 2 1/2 lbs of potatoes and place in large pot and boil. Reduce heat and cook until tender. Remove from heat and drain water. Add butter, evaporated milk, brown sugar, vanilla extract, cinnamon and beat until smooth. Using a large spoon; spoon mashed potato into 2 qt casserole dish smooth with smooth until top flattened and cover the top with marshmallows sprinkle with cinnamon if desired.
