French Cream
(this is great as a cold salad/appetizer or even as a dessert) 16 oz sour cream 3 cups whipping cream 1 1/2 cups super fine sugar 2 env gelatin 1/2 cup water 16 oz cream cheese, soft 2 teaspoons vanilla 1 Tablespoon super fine sugar Whisk sour cream and 2 cups cream in a medium pan; gradually add sugar. Cook over low heat until warm, whisking often. Sprinkle gelatin over water in a pan - let stand 1 minute. Cook on medium until it dissolves. Add to sour cream mixture. Beat cream cheese. Gradually add sour cream & vanilla. Pour into a greased 8-cup or 2 qt mold / bowl. Chill until firm (4 hours) or up to 2 days. Unmold. Beat in 1 cup cream until foamy; add sugar.
