Eggs for a Bunch

1/4 pound sausage, cooked and drained
1/2 red bell pepper,diced small
1/2 small onion,diced fine
1 teaspoon salt
4 eggs, beaten slightly
1 cup thick white sauce
shredded cheddar cheese

Make 1 cup thick white sauce, 3 Tablespoons butter, 3 Tablespoons flour +
1 cup milk. Allow to cool.

Beat eggs slightly. Add sausage, bell pepper, onion, and salt. Gradually
whisk in white sauce. Pour into 8 inch greased square pan. Bake at 325
for 45 minutes. Add shredded cheddar cheese and return to oven for 5
minutes.
