Novel Crab Newburg

Yield: 4 Servings

2 Tbsp butter or margarine
2 Tbsp flour
1/2 cup milk
1 cn frozen cream of shrimp soup
1 lb lump crab meat
2 Tbsp sherry

Melt butter and blend in flour. Stir in milk and the soup, cooking slowly
and stirring constantly, 3 to 5 minutes, or until soup thaws and sauce
thickens. Simmer 1 minute. Add crab meat and continue cooking until crab
is heated through. Stir in wine and blend. Good on hot waffles. Makes 4
servings.

Serve over rice with steamed vegetables on the side."

Cook Time:10 Minutes
Ready In:15 Minutes
Servings:4

1/3 cup butter
1 pound fresh crabmeat
1 pint sour cream, room temperature
1/4 teaspoon ground black pepper
2 tablespoons tomato paste
2 tablespoons dry sherry
2 tablespoons grated Parmesan cheese

Melt butter in a skillet over medium heat. Add crab, stir and cook for
2 minutes. Mix in sour cream, tomato paste, dry sherry, parmesan and
black pepper. Cook, stirring constantly, until heated through. Do not
boil.
