Holiday Refrigerator Cookies

1 lb margarine
1 cup white sugar
1 cup brown sugar
3 eggs
2 Tbsp tap water or milk
3 tsp flavoring ( vanilla, almond etc as desired )
1 tsp baking soda
1 tsp baking powder
5 1/2 cups flour ( approx )
2 cups combination of : chopped pitted dates, raisins, nuts, candied
fruit, etc.

These are slice and bake cookies: Don't have to buy them at the store as
you can make your own: The nice part is that you can prepare the dough
ahead of time, store in the fridge or freezer and bake as desired. Beat
margarine and sugars to combine well. Beat in eggs one at a time. Add
water and flavoring. Mix dry ingredients and mix in flour to form a
dough. Fold in desired types of fruit and nuts. On wax paper, form into 2
long rolls and wrap each roll in wax paper/plastic and chill very well to
firm up dough . Then keep in refrigerator and bake as needed. Dough may
also be frozen if desired. Slice cookies with sharp knife 1/4 inch thick
and place and bake a few inches apart on greased baking sheets, 375F 10
to 15 minutes or golden and set. Cool a few minutes before removing to
rack to cool completely. Note: yield: depends on how thick you form your
rolls ( usually 2 inches thick ) and how many slices you cut from each
roll. You should get several dozen at least.
