Foolprooof Poached Salmon
Hot or cold, this is easy and good. Put salmon fillet or whole fish in a large pot or steamer filled with water to cover which has salt and lemon juice or vinegar and simmer till flesh turns the right color and when pierced, it looks done (about 10 min). That's it. You can add peppercorns, parsley, garlic or onion or just what is above. Remove carefully so it doesn't break. Then when you serve it you can put a cucumber-mayo-sour cream sauce to go with it or a hollandaise at room temp. One good one is to combine a hollandaise mix from a packet and green goddess dressing. -- Rec.food.recipes is moderated by Patricia Hill at .
