something nice for parties this time of year.

Absolut Vodka Cured Salmon with Citrus Juices

from the Food Network
Yield: 4 servings

16 thin slices raw salmon
2 shallots, finely chopped
1 leek, finely chopped
2 Tbsp Absolut Vodka
juice of 1 ripe blood orange
1 tsp sea salt
Freshly milled black pepper
Few sprigs mizuno leaves or rocket
juice of 1lime to finish


Lay out the thin slices of salmon on plates, 4 per plate.
Sprinkle each plate evenly with the shallot and leek.
Mix the vodka and orange juice, divide into 4 equal
portions and trickle 1 portion on to each plate to cover
the salmon. Just before serving, sprinkle lightly with sea
salt, freshly ground black pepper and lime juice. Garnish
with mizuno leaves or rocket and serve immediately.
