Default Seafood Laksa

Seafood Laksa

1 onion sliced
1 tblsp laksa paste
3 cups chicken stock
1/2 cup low fat coconut milk
12 large raw prawns deveined and tail intact
12 scallops
200gm thick fresh rice noodles
1 red capsicum sliced
90gm baby corn
90gm bean sprouts
90gm snow peas
coriander, mint and lime wedges to garnish

In a wok or large saucepan, stir fry onion in a little stock for 2 min. Add
laksa paste and cook stirring for 2 min then add remaining stock, coconut milk
and bring to the boil. Simmer 2 min then add seafood, cook a little, add
noodles, capsicum and corn. Simmer 2 min till seafood is cooked and the noodles
are plump. Stir in snow peas and sprouts. Serving Suggestion: Divide into warm
bowls and garnish with herbs and lime wedges.
