Beer Biscuits
submitted by lmatt 2 cups all-purpose flour 1 cup quick-cooking oats, run in a blender and grind fine 2 Tblspn corn meal, white or yellow 2 Tblspn rye flour ( or use 4 Tblspn of corn meal if you don't have rye flour) 2 tablespoons sugar 1 tablespoon baking powder (this makes it rise) 1 teaspoon salt 1 botle (12 oz.) beer (I like a heavy, dark beer for the flavor) 1/4 cup butter, melted 2 eggs (This also makes it light) Combine flour, oats, sugar, baking powder and salt in a large bowl. Add butter mixing until absorbed Add eggs and mix Add beer, stir well Batter should be stiff. Drop by large spoonful on greased cookie sheet (add flour a Tblspn full at a time to make it stiff if needed) leave about 2" between bisquits. Bake at 375 F 10 minutes or until toothpick inserted in center comes out clean. They get beautiful golden brown and make the kitchen smell Wunderbar!
