This may come close to what the person who was asking about a Veggie
Fried Rice was looking for. I use peas but you can also get the frozen peas and carrots together and supstitute that. The yellow color will come from the spice turmeric. Michele http://members.aol.com/michelesrecipes/recipes.htm Golden Rice Recipe By :Michele WIlson Serving Size : 6 Preparation Time :0:05 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces white pearl onions 8 ounces frozen green peas 3 cups rice 1 tablespoon vegetable oil 1 teaspoon turmeric 1/4 teaspoon ground ginger 1 teaspoon seasoned salt 1/4 teaspoon seasoned pepper 2 teaspoons lemon juice Heat oil in a frying pan. Add turmeric and ginger and cook for a few seconds or until you can smell the toasted turmeric. Add onions and stir to coat. Cook for about three minutes. Add the peas, salt, pepper and lemon juice. Stir to coat. Cover and cook for about eight minutes or until tender. Stir occasionally. Add rice and stir to mix thoroughly. Heat through.
