Default Barbecued Pot Roast

Barbecued Pot Roast
Pot roast recipe with homemade barbecue sauce.

1 pot roast, about 4 pounds
2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons butter
1/2 cup water or beef broth
1 can (8 ounces) tomato sauce
2 medium onions, sliced
2 cloves garlic, crushed and minced
2 tablespoons brown sugar
1/2 teaspoon dry mustard
1/4 cup vinegar
1/4 cup ketchup
1/4 cup lemon juice
2 teaspoons Worcestershire sauce

Rub roast with salt and pepper. Brown on all sides in melted butter over
medium-low heat. Add water, tomato sauce, sliced onions, and crushed
garlic. Cover and cook over low heat for 1 1/2 hours. Mix remaining
ingredients together and pour over pot roast.
Simmer for 1 1/2 hours longer, or until very tender. Serve with hot
buttered noodles or mashed potatoes, along with green beans or asparagus.
