Default Taco Soup

Taco Soup

Note:All are 15 ounce cans.

1 Lb. ground beef or pork sausage
1 large onion diced
1 can Rotel tomatoes
1 can tomato sauce
1 can whole kernel corn
1 can black beans
1 can pinto beans
1 can kidney beans
1 can red beans
1 pkg. taco seasoning
1 pkg. Ranch dressing mix
Essence (Emeril's Creole Seasoning), to taste, see below
1 bag tortilla chips
Monterrey jack cheese
sour cream
chopped green onions

Brown meat in a large pot. Add onions 2 minutes after meat is starting to
sizzle. I don't drain the meat(too much flavor there). Add all ingredients
except tortilla chips, sour cream, cheese and green onions. Do not drain any
of the liquids from anycans! Season with a couple of pinches of Essence.
Trust me! Simmer 1 hour.To serve: crumble tortilla chips into a bowl and top
with soup, cheese, sour cream and green onions. Very cheap, very fast.

Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or
container.
Yield: about 2/3 cup

This is an all purpose seasoning.
