Subject: Lai Mein (Stretched Noodles)?
Had the absolute best stir fried noodles dish in a Chinese restaurant
in Washington DC's Chinatown area today, made from noodles literally
made 5 minutes beforehand in front of the shop. They are called Lai
Mein, "Lai" meaning "pull" or so a Google showed me. The dough was
extremely elastic, and as he pulled it out, much like making taffy, it
stretched easily 3 feet before he doubled it half a dozen times or so
and rolled it in more flour. While I recognize the chef's artistry and
skill, the basic process seems easy enough to try to make these noodles
at home. Anyone have any recipes?
