Fiesta Chicken Tacos
1 lb. skinless, boneless chicken, cut into 1/4" strips 2 Tbsp Tabasco brand green pepper sauce 1 Tbsp vegetable oil 1/2 cup onion, chopped 1 (15 1/4 oz.) can Del Monte Fiesta Corn, drained 1 cup salsa 12 taco shells, warmed shredded cheddar cheese, shredded lettuce, chopped tomatoes and sour cream (optional) Sprinkle chicken with Tabasco brand green pepper sauce and toss until well coated. Heat oil in large skillet over medium heat. Add chicken and onion and cook 8 to 10 minutes or until done. Add corn and salsa to skillet, heat thoroughly. Fill each taco shell with filling and top with shredded cheddar cheese, lettuce, tomatoes and sour cream, as desired. Makes 6 servings. -- Rec.food.recipes is moderated by Patricia Hill at .
