Spinach Nuggets
(2) 10-ounce packages frozen chopped spinach 1-Tbsp dried minced onion 3-Tbsp butter or margarine 1-cup herb-seasoned stuffing mix 1-cup grated Parmesan cheese 2-beaten eggs In a saucepan cook the spinach and dried onion according to spinach package directions. Drain well. In a mixing bowl stir together hot spinach mixture and butter or margarine till butter melts. Add stuffing mix and cheese. Stir in eggs. Shape into 1-inch balls. (If desired, place spinach balls in a shallow pan.) Cover and freeze about 1 hour or till firm. Transfer spinach balls to freezer container. Seal, label, and freeze up to 4 months. Place unfrozen spinach balls on a greased baking sheet. Bake in a 375 oven about 7 minutes or till heated through. (Or place frozen spinach balls in a shallow baking pan. Bake in a 375 for 15 to 20 minutes or till heated through). Makes about 48. Note: To make handling the mixture easier, drop small mounds onto a baking sheet lined with waxed paper.
