Oven Scrambled Eggs for a Crowd

Serves/Makes : 50

2 1/2 qt. broken eggs, about 50
1 1/4 qt. hot milk
1 1/3 Tbsp. salt
1/2 lb. butter

Beat eggs slightly. Add milk and salt, mix well. Pour melted butter into 2
baking pans (16 1/2 x 10 1/2 x 2 1/2-inch)
using 1/2 cup per pan. Add the egg mixture. Bake at 350 degrees for 40
minutes. Stir after 20 minutes. Be sure to use pan 1 1/2 to 2-inches in
depth.
