Spinach And Onion Salad

3 cloves garlic
6 Tbsp. fresh lemon juice
1/4 c. olive oil
3/4 tsp. salt or to taste
1 bunch fresh spinach leaves, torn
into bite-size pieces
1/2 white onion, thinly sliced into
rings

In a blender or food processor, combine garlic, lemon juice, olive oil and
salt. In a salad bowl, toss spinach and onions with desired amount of
dressing. Makes 6 servings.
