Howdy all. Found your group doing a net search for Turtle soup. I think it
was "mass recipes" that mentioned R.F.R. Anyway I'd like your
opinions/suggestions, as I've just subscribed here. I have most of a 20 lb
Snapping turtle in the freezer, that son and I caught last summer (yes we
have fishing license.)I usually fry it, but a couple days ao I pulled one
of the 2-3 lb. portions and am thinking something along a crock-pot or
stove top soup. Here is a twist. We (family) also hunt mushrooms
extensively. I also pulled a portion of frozen Hen of the Woods. Usually I
dry them, but get so many that I froze some. I have no problem with
freezing morels, but the Hen's tend to turn black-ish when thawed. So-o-o
I'm thinking I might add the frozen Hens to the browned turtle cubed and
mixed stock while still frozen? They are already washed and clean frozen
without water, as I do with the "sponge" (aka Morel) mushroom. This is
kind
of important as I use the Hen for medicinal condition as well as it's
flavor (which imo is primo) So any turtle soup recipes that you have, or
suggestions on adding the wild mushrooms will earn you a TY (-: and very
much appreciation as I plan this for Sunday. TIA & pleased to meet all of
you.
