For Jeremiah, who's looking to use up some yogurt:
Yogurt Cheese If it's real (ie not non-fat or "lite") yogurt, then I'd suggest dumping it into a sieve set over a bowl, covering it with plastic wrap, and leaving it in the fridge overnight. The whey will separate (and can be discarded) and you'll be left with a thick and creamy result that's good for any number of things. You can serve it on baked potatoes in lieu of sour cream or (my favourite) put some in a bowl, drizzle it with honey, a little *bam* of cinnamon, and a sprinkle of chopped almonds or walnuts. Fantastic! Or put a cup of it in a blender with a banana and a cup of orange juice for a great smoothie. -- Rec.food.recipes is moderated by Patricia Hill at .
