Request: I'm looking for a recipe for a breakfast casserole that uses
frozen
hash
browns, eggs, cheese, bell peppers, etc. Sort of like an omelet only you
bake it in a big dish. I used to have it in my file, but it seems to have
run off. If anyone has something like what I'm looking for, thanks in
advance!!

Crockpot Breakfast Casserole

1 pound bag of frozen hash browns
1 chopped onion
1 pound ham, sausage or bacon - cooked
4 cups shredded cheese
12 eggs
1 cup whole or evaporated milk
salt / pepper

Layer one-half of the hashbrowns, onion, meat & cheese in large crock-pot;
Repeat. Mix the eggs well with the milk, salt & pepper. Pour egg mixture
over
the top of the crockpot contents. Cook on low overnight.

We like the maple flavored sausage with sharp cheddar cheese, but there
are a lot of possible combinations. Can also add some mustard to the eggs
and milk.
