Default Orange Apricot Loaf

Orange Apricot Loaf

"A great loaf to warm you up on a cold, rainy day. It's bursting with
apricot and orange flavour and sure to put a pleasant smell in the air
when it's baked."

Prep Time:15 Minutes
Cook Time:40 Minutes
Ready In:1 Hour

1/2 cup sultana raisins, chopped
1/4 cup dried apricots, chopped
1 tablespoon orange zest
2 tablespoons orange juice
3 tablespoons butter, softened
1/2 cup white sugar
1 egg
2 cups self-rising flour
3/4 cup milk

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch
loaf pan. In a small bowl, combine sultanas, apricots, orange rind and
orange juice. Let stand for 10 minutes. In a large bowl, cream butter and
sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with
milk. Pour batter into prepared pan. Bake in preheated oven for 40 to 45
minutes, or until toothpick inserted into centre of loaf comes out clean.
