Default Peach Bake A La Nita

Peach Bake A La Nita

1 or 2 large cans (8 halves) Peach (or Apricot) halves, drained
1/2 cup Dark Brown Sugar, packed firm
1/2 cup granulated Sugar
1/2 teaspoon cinnamon
1 stack Ritz crackers, finely crushed
1/2 stick Butter, melted (more if needed)
6 oz. Sharp Cheddar cheese, grated (optional)

Place drained peach or apricot halves (cut side up) in a buttered 2 qt.
casserole dish. Combine sugars, cinnamon and finely crushed crackers.
Sprinkle mixture over peaches. Drizzle with melted butter. Bake at 350
degrees F for about 20 to 25 minutes (until crackers are lightly browned).
Sprinkle top with grated cheese and bake another 10 minutes. Serve warm.
