Swiss Stuffed Prunes With Bacon

24 lg. size prunes, stones removed
24 1/2 x 1/2 inch circles Swiss cheese
12 slices bacon

Put cheese pieces inside prune, where pit has been removed. Place bacon
in cold frying pan. Cook over low heat until most of fat is extracted, but
keeping bacon strips limp. Remove from pan. Cut in half. Wrap 1/2 bacon
strip around each prune. Fasten with toothpick. Place on wire rack in
shallow pan. Broil under medium heat until bacon is crisp. Place on
paper towel to absorb fat. Serve warm.


Apple Cider Prune Chutney

2 cup diced apples
1 1/2 cup sliced onions
1 cup diced green pepper
1 clove garlic, pressed
1 cup apple cider vinegar
1 cup water
1/2 cup sugar
1/4 cup dark brown sugar, packed
2 cup pitted prunes, halved
1/2 cup maraschino cherries, halved
1 Tbsp. grated fresh ginger
2 tsp. mustard seeds
1/2 tsp. salt or to taste
1/2 tsp. crushed red pepper

In large saucepan, combine first 8 ingredients. Bring to a boil; reduce
heat and simmer 15 minutes, stirring occasionally. Mix in remaining
ingredients. Heat to boiling; reduce heat and simmer 15 minutes or until
liquid is syrupy. Cool and refrigerate. OR ladle hot chutney into hot,
sterilized jars and seal according to manufacturer's instructions. Process
in hot water bath for 15 minutes. Store in cool place. Recipe may be
doubled. Makes approximately 2 pints.

Crock Pot Chicken

1 chicken, cut up
1 can peaches
1 cup dry prunes
Salt & pepper to taste

Place washed chicken into pot. Add peach liquid. Cook 5 hours or more.
Add prunes, cook another hour. Add peaches 15 minutes before serving. Can
prepare at night, finish when you return home from work.

Prune Custard

2 eggs
2 Tbsp. sugar
1/8 tsp. salt
1 cup scalded milk
1/2 cup chopped cooked prunes
Sweeten prunes to taste

Mix all together and pour into well oiled molds. Set in pan of warm
water. Bake in moderate oven at 375 degrees for 30 to 40 minutes.

Prune Whip
1/2 lb. prunes cooked* until soft (or
2 cans Gerber Baby Food prunes)
1/2 cup sugar
Whites of 5 eggs
1/2 tsp. lemon juice

Add sugar to prunes and cook 5 minutes or until consistency of marmalade.
Beat egg whites until stiff and add, when cold, fruit mixture gradually.
Add lemon juice. Heap lightly in buttered dish and bake 20 minutes in
slow oven 275 degrees. Serve with touch of cream on top. *Remove seeds
and mash.

Prune Spread

1 cup soft pitted prunes
1/2 cup frozen apple juice concentrate
1/2 tsp. cinnamon

Place all ingredients in blender and blend. Good sugar free spread for
bread. Also great with peanut butter.

Norwegian Sweet Soup
1 cup prunes
1 cup raisins
1/2 cup currants
1 cup chopped apples
2 cup grape juice
3 cup water
1 cup sugar
1/2 cup minute tapioca
1 stick cinnamon
1/4 tsp. salt

Combine all ingredients except grape juice and cook until fruit is
tender. Then add grape juice and 1/2 lemon sliced. Can be served hot or
cold. Can use cream on it, if you like.
