Chorizo and white beans with coriander
Serves 4 400g/14oz can cannellini beans 2 fresh chorizo sausages, mild or hot 1 tbsp olive oil 1 garlic clove, crushed 1 tsp paprika sea salt freshly ground black pepper 2 Tbsp coriander or flat parsley leaves Drain the beans, rinse and set aside. Slice the chorizo sausages thickly on the diagonal. Heat the olive oil in a frying pan, and fry the chorizo sausage until browned and sizzling. Remove the chorizo and add the beans, garlic, paprika, salt and pepper to the oil. Simmer for five minutes until the beans are hot, adding a dash of water if necessary. Add the coriander or parsley and stir through, then tip onto a platter. Scatter the sizzled chorizo on top and serve.
