this is from my neighbor Jenny,
she made me some yesterday, yum

Jenny's Onion Rings

1 cup flour
1 cup cornmeal
1 tsp. baking powder
2 eggs; beaten
liquid: milk, buttermilk or water
sweet onions; sliced into rings

Mix all ingredients but onions, add enough liquid to make a medium batter.
Dip in onion rings and deep fry until golden brown.
