Sole with Fresh Fruit Sauce
Serve this with steamed rice and a spinach salad. 1 1/2 lbs. Sole fillets 1 1/2 cups boiling water 1/3 cup finely chopped onion 2 Tbsps. lemon juice 3/4 tsp. salt (optional) Sauce: 1 cup orange juice 1/4 cup water 2 Tbsps. cornstarch 2 Tbsps. liquid honey 1 tsp. grated orange zest 1 tsp. grated lemon zest 1 tsp. dijon mustard 1 cup fresh orange sections 1 cup seedless green grapes, halved fresh mint leaves Roll fish fillets and secure with toothpicks. Arrange in shallow skillet. Add boiling water, onion, lemon juice and salt. Poach, covered, over low heat for about 8 minutes. To microwave, place fish in casserole; omit water but sprinkle fish with lemon juice and salt. Cover and microwave on high for 5 to 7 minutes or until fish flakes easily when tested with fork. Sauce: Meanwhile, in a small saucepan, combine orange juice, water cornstarch, honey, orange and lemon zest, and mustard. Cook over low heat, stirring constantly. Add orange sections and green grapes. Spoon sauce over drained fish fillets and garnish with mint leaves. Makes 4 servings. Calories 161, Fat 1 g, Fiber 1 g, Protein 17 g, Carbohydrate 21 g.
