A great casserole my mother made years ago, and it is great today!!
Celery Caserole 3 cups thinly sliced celery 1/2 cup sliced water chestnuts 1/2 cup sliced mushrooms 1/4 cup slivered slmonds 1/2 cup bread or cracker curmbs 1/2 cup freshly graded parmesan cheese 5 Tbsp butter -- divided 3 Tbsp flour 1 cup chicken broth 3/4 cup milk Boil celery 5 min. drain and put in greased 2 qt. casserole with almonds and water chestnuts. Melt 3 Tbsp of butter with flour, making a roux. Slowly stir in broth and milk. Simmer for 5 minutes stirring constantl. Add mushrooms and pour over celery mixture. Stir. Melt the 2 Tbsp of butter and mix in crumbs and cheese, sprinkle over mixture. Bake at 350 degrees until hot and bubbly, about 20 minutes. -- Rec.food.recipes is moderated by Patricia Hill at .
