Coleslaw for Two
This is a cut down clone of KFC's coleslaw, it's practically an exact replica. The secret to this is to make it in the morning and let it marinate alllll day! If you eat coleslaw right away it will only taste like mayo. (full recipe below) 1/2 package shredded cabbage 2 1/2 teaspoons shredded carrots 1 1/4 teaspoons minced onions 1 1/8 tablespoons granulated sugar 1/8 teaspoon salt 1/16 teaspoon pepper 2 1/2 teaspoons milk 4 7/8 teaspoons mayonnaise 2 1/2 teaspoons buttermilk 1 teaspoon white vinegar 1 1/2 teaspoons lemon juice Cabbage and carrots must be finely shredded (dont need to do this if you use the shredded cabbage in the bag). Pour cabbage and carrot mixture into large bowl and stir in minced onions. Mix remaining ingredients until smooth, pour over cabbage, carrots and onions and mix well. Cover bowl and refrigerate several hours or overnight before serving. 8 cups finely diced cabbage (about 1 head) (or package of preshredded cabbage) 1/4 cup diced carrots 2 tablespoons minced onions 1/3 cup granulated sugar 1/2 teaspoon salt 1/8 teaspoon pepper 1/4 cup milk 1/2 cup mayonnaise 1/4 cup buttermilk 1 1/2 tablespoons white vinegar 2 1/2 tablespoons lemon juice Follow directions from top. -- Rec.food.recipes is moderated by Patricia Hill at .
