Default Salmon Loaf

Here is a recipe for canned salmon which we like very much. I make it
often and serve with stewed tomatoes and mashed potatoes.

Salmon Loaf

2 cups flaked salmon, canned
3 Tbsp flour
3 Tbsp fat, I use bacon grease
1 cup salmon liquid (from can) and milk
(add milk to salmon liquid to make 1 cup)
2 cups bread cubes
1 egg
salt & pepper to taste

Drain salmon, save liquid. To make sauce: Blend fat and flour together,
add enough milk to salmon liquid to make 1 cup and stir slowly into fat
and flour. Cook till thickened, stir constsntly. Add seasonings. Mix
sauce with the other ingredients. Bake in uncovered loaf pan 350 degree
oven till done.

Note: My recipe has no time for baking, you just have to check it after 20
or 25 min. till light brown on top.
