Default Saltfish Fritters

Saltfish Fritters

1/4 lb./1/2 cup salted codfish
1/4 lb./1 cup flour
1 level Tbsp vegetable oil
1 medium sized onion
2 medium sized tomatoes
1 small clove of garlic
1/2 tsp paprika
2 spring onions (scallions)
1/4 teaspoon black pepper
oil for frying
ice-cold water

Soak codfish in water overnight to remove excess salt.Use a sharp knife to
shred the fish and then set aside.Chop and combine onions, garlic, spring
onion, black pepper and tomatoes and fry for 3-5 mins.Place the codfish in
a mixing bowl and add flour and enough cold water to make a thin
batter.Drain and add the fried mixture and the paprika.Shape and
spoon small portions of the batter into a pan of heated oil or deep fat
fryer.Fry until golden brown and crisp all over.Drain on paper towels and
keep in a dish in a warm oven until ready to serve
